Mojo's Roadhouse Menu
This recipe is great served on a bun with chips, cole slaw and a pickle on the side. Make a big batch for the afternoon ballgames.
Cook 1 pound of hamburger with 1 small, chopped onion. Drain and add 1/2 cup ketchup, 1/8 cup vinegar, 2 teaspoons mustard, 1 teaspoon Worcestershire sauce, 1 teaspoon sugar, dash of salt & pepper. Let simmer and serve--the longer it sits the better it tastes! (Recipe can be doubled for larger servings).
A Roadhouse favorite, passed-down from Mama Mojo. Try this with beef, chicken or venison. Compliment with soda crackers or pretzels.
Cook 1 pound of ground beef (chicken or venison) with 1 small, chopped onion. Drain and add 2 1/2 cups red kidney beans and 1 can tomato soup. Heat into a paste (about 10 minutes) and add 3 tablespoons water, 1 tablespoon floor, 1 tablespoon chili powder and 1 teaspoon salt. Simmer for 30 minutes and serve. (Recipe can be doubled for larger servings).
A tasty sauce served with sausage franks, hot dogs or mini links. Buns are optional, but highly recommended (a "two hander").
Lightly slice (corkscrew) and grill 1 pound of franks with 2 tablespoons butter. (If outdoor grill is used, butter is omitted). Add 1 can (10 3/4 ounce) condensed tomato soup, 1/4 cup brown sugar, 1/4 cup water, 3 tablespoons vinegar and 1 tablespoon Worcestershire sauce. Simmer about 10 minutes and add 1/2 lemon (thinly sliced), 1/2 onion (thinly sliced) and 1/4 cup green pepper (chopped). Simmer an additional 10 minutes and serve. (Recipe can be doubled for larger servings).
Direct from the deep south where they know how to cook, here's a tasty chocolate snack guaranteed to help chase the blues away.
Blend together a 16oz jar of creamy peanut butter and 1 cup of softened margarine. Gradually add 16oz of powdered sugar until blended. Shape into quarter size balls and chill until firm. Melt in a microwave, 2 cups of semi-sweet chocolate morsals and 2 tablespoons of shortening. Stir as needed until melted. Dip chilled peanut butter balls in the chocolate and place on wax paper. Chill and serve. Makes about 2 dozen.
Serve it warm with a scoop of vanilla ice cream, add chocolate topping, whip cream and a cherry and you've got the perfect treat for saying "Forgive me baby."
Preheat oven at 375 degrees. Mix together 2 cups flour, 4 tablespoons cocoa, 1 cup water, 1 cup sugar, 2 teaspoons baking soda, 1 teaspoon vanilla and 1 cup mayonnaise. Grease and flour pan (9x13). Place mixture in pan and bake in oven for 35-45 minutes. Cool and serve.
A taste of the south in every slice! Great with honey butter or sorghum. Goes great with a spicy bowl of Last Call Chili.
Preheat oven at 325 degrees. Grate a fresh zucchini until you have measured two cups. Beat together 3 eggs, 2 cups sugar and 1 cup vegetable oil. Add 1 teaspoon vanilla and stir in 2 cups grated zucchini. Sift into the mixture 3 cups flour, 1 teaspoon salt, 3 teaspoons cinnamon, 1 teaspoon nutmeg, 1 teaspoon baking soda and 1/4 teaspoon baking powder. Add 1 cup nuts (walnut or pecan) and mix completely. Grease two bread loaf pans (9x5x3) and add mixture to the pans. Bake at 325 degrees for 60-75 minutes. Cool and serve.
- Muddy Mississippi Waters Bars
This Mississippi Delta treat will send the blues down the river.
Preheat oven to 350 degrees. Set aside 1 cup of chopped walnuts. Prepare 1 semi-sweet chocolate bar (4 oz.) and 1 white chocolate baking bar (4 oz.) by dividing and chopping the bars into small pieces. In a large bowl, beat 1/2 cup of softened butter (or margarine) with 3/4 cup of firmly packed brown sugar. Beat at medium speed (about 4 minutes) until the mixture is light and fluffy.
Add 1 teaspoon of vanilla extract and 1 large egg. Mix on low speed for 1 to 2 minutes. Gradually combine 1 cup of all purpose flour, 1/2 teaspoon of baking soda and 1/4 teaspoon of salt until well blended. Mix in 1/2 of both the semi-sweet chocolate and white chocolate pieces and 1/2 cup of the walnuts. Spread the mixture into a greased 9 inch square baking pan. Bake at 350 degrees for 12 to 15 minutes or until a toothpick inserted in the center comes out almost clean.
When finished, sprinkle the top with the remaining semi-sweet and white chocolate pieces. Cover with aluminum foil and let stand for 5 minutes or until the chocolates are melted. To give a marble effect, swirl the melted chocolates with a knife. Sprinkle the remaining walnuts on the top. Let cool in pan until firm. Cut into bars and serve.
- Grilled Red, White & Blue Potatoes
A twist on the traditional potato skin recipe. Great with barbeque--try it with chicken or ribs.
Pre-heat outdoor grill. Pour 1/2 cup of vegetable oil into a large bowl. Pour 2 envelopes of onion soup mix onto a large plate. Wash 4 to 6 red potatoes. Prepare 2 cups of crumbled bleu cheese and set aside. Keeping the skins intact, cut the potatoes into 1/4" slices. Dip the potatoes in vegetable oil. Removeexcess oil and dip the potatoes in the onion soup mix, coating lightly and evenly. Shake excess mix from the potatoes. Place the potatoes on aluminum foil sprayed with non-stick cooking spray. Sprinkle with garlic salt(optional). Cover with foil and place on the grill for 30 minutes on high heat or oven-baked at 400 degrees for 30 minutes. Turn once after 15 minutes for even grilling. Remove from the grill and top with bleu cheese. Add sour cream and chives to taste. Serve and enjoy!
